Low acyl gellan gum is white powder solid, with following features:

6.Reversibly at very low concentrations it can form a brittle gel.Sodium or potassium irons can form thermal reversible gel, 

while Magnesium or calcium irons form thermal un-reversible gels Can be made into thermal reversible and thermal un-reversible gels.
 

High acyl gellan gum is light
yellow powder, with following features:

1.Excellent elasticity after gel;

2.With good dispersion and hydration characteristics;

Application of Gellan Gum:

Gellan gum with its superior gel performance, has been gradually replaced by agar, carrageenan,used in the

food industry, as a thickener, stabilizer, gelling agents, suspending agents and film-forming agents, such as  beverages, jelly, jams, bread fillers, dairy products, meat, noodles, cakes, shortenings , instant coffee, fish products,ice cream and other foods, as well as candy, sweets and canned pet. It is also used in non-food industries, such as microbial culture, the slow release of the drug, air fresheners, toothpaste, etc.

Gellan gum used in suspension beverages, has strong suspending ability and acid capacity, the dosage is usually added 0.*1% to *0.*2%, with high transparency, it greatly enhances the quality of the beverage and perception.
